Enjoy this delicious Strawberry Granita recipe straight from the Heifer Farm kitchen in Rutland, Massachussetts. Granita is an icy frozen fruit dessert made by intermittently freezing and scraping the mixture. This photo is from a recent meal served to Heifer Farm participants, made from organic strawberries grown right here on the farm.

Yield: about 6 cups

Strawberry Granita Recipe

Ingredients

  • 1 cup hot water
  • 3/4 cups sugar
  • 2 tablespoons lemon juice
  • 3 cups sliced hulled strawberries (1 pounds whole berries) plus additional berries for garnish

Preparation
Stir the first three ingredients in small bowl until sugar dissolves. Blend 3 cups of strawberries in the processor until smooth. Add sugar syrup and blend until combined.

Pour mixture into a 9x13” nonstick metal baking pan. Freeze until icy around the edges, about 25 minutes. Using a fork, stir icy portions into middle of pan. Freeze until the mixture is frozen, stirring edges into the center every 20 to 30 minutes, about 1 1/2 hours. Using a fork, scrape granita into flaky crystals. Cover tightly and freeze. (Can be made one day ahead. Keep frozen.)

Scrape granita into bowls. Garnish with berries and serve.
